Med u svom sastavu ima preko 70 različitih sastojaka. U medu najviše ima ugljenih hidrata, od kojih najviše glukoze i fruktoze (preko 60%), dok se sadržaj saharoze kreće oko 9%. Sastav meda, odnosno sadržaj pojedinih komponenti zavisi u prvom redu od vrste biljaka čiji nektar i polen pčele sakupljaju.

Pod grupom ostalo se podrazumijeva i hidroksimetilfurfural (HMF) koji je najvažniji parametar u određivanju roka trajanja meda. HMF je organski spoj ili ciklični aldehid koji u medu uglavnom nastaje kao posledica dehidratacije glukoze i fruktoze, mada može nastati i kao proizvod Maillardovih reakcija koje podrazumijevaju povezivanje šećera i proteina u novi molekul. Utvđeno je da se HMF formira već u samoj košnici, dok se čuvanjem meda njegov sadržaj povećava.
Faktori koji utiču na sadržaj HMF-a su:
- temperatura,
- vrijeme zagrijavanja,
- uslovi skladištenja,
- izloženost svjetlosti, kao i
- hemijske karakteristike koje zavise od botaničkog porijekla meda (pH, ukupna kiselost, vlaga, količina mineralnih materija).
U medu je dozvoljeno maksimalno prisustvo sadržaja hidroksimetilfurfurala do 40 mg/kg meda (Pravilnikom o minimalnom kvalitetu meda i ostalih pčelinjih proizvoda). Rezultati laboratorijskih analiza pokazuju da je početni sadržaj HMF-a u crnogorskom medu između 8 i 10 mg/kg. Ukoliko je početni sadržaj HMF-a u medu 10 mg/kg, s obzirom da njegov sadržaj sa starenjem raste , nakon 18 mjeseci sadržaj HMF-a u ovom medu bi bio 25 mg/kg. Nepravilnim skladištenjem, izlaganju svjetlosti, a pogotovo visokim temperaturama, kao i ostalim gore navedenim negativnim faktorima sadržaj HMF može bitno da se poveća. Dobar pokazatelj o uticaju temperature na med, i povećanje sadržaja HMF-a u njemu predstavlja opsežno istraživanje koje je objavljeno u reviji L’abelilede France, u kojem su uzorci meda skladišteni na različitim temperaturama od 25 do 35⁰. Nakon četiri mjeseca čuvanja na ovim temperaturama sadržaj HMF-a se povećao i iznosio je između 15 i 30 mg/kg, što znači da bi ovaj med za godinu dana bio samo dobar za industrijsku preradu.

Mora se istaći da uticaj povišene temperature na povećanje HMF-a varira kod različitih vrsta meda. Tako, na primjer, indijski naučnici su zagrijavali dvije vrste meda na temperaturi od 70⁰ tokom 60 minuta, i zabilježili porast HMF-a sa 4,45 na 7,66 mg/kg, odnosno sa 1,23 na 3,1 mg/kg i zaključili da se veći udio HMF u sastavu meda može povezati sa njegovom nižom pH vrijednosti.
Prihranjivanje pčela sa invertnim sirupom povećava sadržaj HMF-a u medu jer invertni sirup sadrži od 50-100 mg/kg pa i više od od ove vrijednosti. Prihranjivanjem sa običnim sirupom količina HMF-a u medu je neznatna.
Zaključak
Kao što se može zaključiti, sadržaj organskog jedninjenja HMF-a predstavlja ključan pokazatelj kvaliteta i bitan parametar roka trajanja meda. Ranije je vladalo mišljenje da je HMF jako štetan za zdravlje, međutim, ovo jedinjenje se nalazi i u raznim drugim namirnicama, a kao maksimalno dozvoljenu dozu na dnevnom nivou neki preporučuju granicu od 30 mg/kg. O mogućnosti unošenja putem ishrane medom dovoljno je istaći da se granica od 40 mg HMF-a koju je propisala Evropska unija odnosi na kilogram ovog dragocjenog proizvoda. Bez obzira što se veća koncentracija HMF-a, racionalno gledano ne može unijeti u organizam putem meda, HMF po savremenim istraživanjima kao proizvod razgradnje šećera u medu, u prvom redu fruktoze dovodi do smanjenja njegovog kvaliteta. Prema svemu ovome, rok trajanja naših medova je utvrđen na dvije i po godine, tačnije, najbolje bi ga bilo upotrijebiti u periodu do dvije i po godine.
