Osim isparavanja i disanja gubici mogu nastati\nusled fotosinteze, rasta i razvoja, transpiracije, produkcije etilena, kao i\nusled fiziolo\u0161kih, fizi\u010dkih i patolo\u0161kih povreda. Pravilnim \u010duvanjem povr\u0107a se\nmo\u017ee usporiti proces zrenja i disanja, usporiti ili zaustaviti gubitak vode,\nkao i razvoj bolesti i smanjiti produkcija etilena.<\/p>\n\n\n\n<p>Povr\u0107e\nkoje se odla\u017ee na \u010duvanje treba da je: zdravo, bez nagnje\u010denja, bez o\u0161te\u0107enja\npoko\u017eice, da nije vla\u017eno, da nije napadnuto bolestima i \u0161teto\u010dinama, da nije\nproklijalo&#8230; Prilikom ovakvog vida manipulisanja proizvodima veoma je va\u017eno poznavati optimalne uslove za svaku vrstu proizvoda kako bi se omogu\u0107ilo \u010duvanje povr\u0107a koje se \u201esla\u017ee\u201c, odnosno koje ima iste i sli sli\u010dne zahtjeve za uslovima sredine kao \u0161to su temperatura, sastav i relativna vla\u017enost vazduha. Osim ovih faktora koje su predstavljeni u gornjoj tabeli (temperatura i relativna vla\u017enost vazduha) bitni faktori koji determini\u0161u mogu\u0107nost zdru\u017eenog \u010duvanja su raznjena mirisa i produkcija fiziolo\u0161ki aktivnih gasova poput etilena. Tako na primjer, \u010duvanjem sa krompirom, jabuke i kru\u0161ke dobijaju neobi\u010dan ukus; miris jabuka i citrusa redovno apsorbuju meso, jaja i mlije\u010dni proizvodi. Jedna od mogu\u0107uh kombinacija je zajedni\u010dko \u010duvanje celera, kupusa, mrkve ili crnog luka zajedno sa jabukama i kru\u0161kama.<\/p>\n\n\n\n<p>Tabela 2.
