Do kvarenja naj\u010de\u0161\u0107e dolazi ako je tokom tehnolo\u0161kog postupka proizvodnje vina do\u0161lo do nekih propusta &#8211; <strong>gro\u017e\u0111e je bilo lo\u0161eg kvaliteta<\/strong>, <strong>nisu se koristila dozvoljena enolo\u0161ka sredstva<\/strong>, <strong>faze proizvodnje se nisu pravovremeno i pravilno odvijale<\/strong>, <strong>ukoliko se nije dovoljno vodilo ra\u010duna o higijeni podrumskih prostorija i sudova<\/strong>&#8230;<\/p>\r\n<p style=\"text-align: justify;\">Temperatura podrumskih prostorija za \u010duvanje bijelih vina treba da je u rasponu od <strong>10 d0 12\u00b0C<\/strong>, a kod \u010duvanja crvenih vina <strong>11-15\u00b0C<\/strong>. Prije nego \u0161to do\u0111e do kvarenja va\u017eno je preventivno djelovati i preduzeti sve mjere kako bi vino bilo zdravo, vrhunskog kvaliteta i zadovoljavaju\u0107ih organolepti\u010dkih osobina. Jedna od mjera je i pravilno i pravovremeno pretakanje vina uz odgovaraju\u0107e <strong>sumporisanje<\/strong> (dodavanje vinobrana).<\/p>\r\n<p style=\"text-align: justify;\">Prije sumporisanja preporuka je da se uradi fizi\u010dko-hemijska analiza vina kako bi se vidjelo koju ta\u010dno koli\u010dinu vinobrana tj. SO2 treba dodati, a kako bi sadr\u017eaj SO2 bio odgovaraju\u0107i.<\/p>\r\n\r\n\r\n\r\n<blockquote>\r\n<p style=\"text-align: justify;\">Nakon pretakanja vina va\u017eno je voditi ra\u010duna o tome da:<\/p>\r\n<\/blockquote>\r\n\r\n\r\n\r\n<p style=\"text-align: justify;\">\u27a2 <strong>Sudovi budu uvijek puni do vrha i zatvoreni<\/strong>;<br \/>\u27a2 <strong>Sadr\u017eaj sumpor-dioksida (SO2) bude odgovaraju\u0107i<\/strong>;<br \/>\u27a2 <strong>Odr\u017eavamo naprijed navedenu temperaturu u podrumu<\/strong> i\u00a0<br \/>\u27a2 <strong>Vino bude zadovljavaju\u0107ih organolepti\u010dkih osobina<\/strong><\/p>\r\n<p style=\"text-align: justify;\">Naj\u010de\u0161\u0107a kvarenja vina su:<\/p>\r\n\r\n\r\n\r\n\r\n\r\n<p style=\"text-align: justify;\">\u2022 <strong><em>Ciknulost vina<\/em><\/strong><\/p>\r\n\r\n\r\n\r\n<p style=\"text-align: justify;\">Ciknulost vina uzrokuju bakterije sir\u0107etne kisjeline. <strong>Vino na povr\u0161ini dobija bjeli\u010dastu ili sivu navlaku i ima pove\u0107an sadr\u017eaj isparljive kiseline<\/strong>. Miris i ukus vina podsje\u0107aju na sir\u0107e.<\/p>\r\n<p style=\"text-align: justify;\"><em>\u010cesto se ovo kvarenje javlja kod vina kod kojih se proces fermentacije (vrenja) nije pravilno odvijao (ukoliko je do\u0161lo do zastoja ili prekida fermentacije).<\/em><\/p>\r\n<p style=\"text-align: justify;\"><strong>Preventivna za\u0161tita vina od navedenog kvarenja podrazumijeva redovno dolivanje sudova vinom &#8211; \u0161to manje otpra\u017enjenog prostora u sudovima tj. \u0161to manji kontakt vina i vazduha<\/strong>.<\/p>\r\n<p style=\"text-align: justify;\">Dobra higijena sudova i podruma te pravilno i pravovremeno sumporisanje su tako\u0111e preventivne mjere.<\/p>\r\n\r\n\r\n\r\n\r\n\r\n<p style=\"text-align: justify;\">Ukoliko je do\u0161lo do kvarenja, vrlo je te\u0161ko popraviti kvalitet vina. Uzro\u010dnici kvarenja su oksidativni kvasci. <strong>Manifestuje se pojavom bjeli\u010dasto-sive navlake na povr\u0161ini vina<\/strong>. Navlaka se razbija na sitne cvjeti\u0107e pa otuda i naziv vinski cvijet.<\/p>\r\n\r\n\r\n\r\n<p style=\"text-align: justify;\">Ako je kvarenje u po\u010detku, miris i ukus vina su nepromijenjeni, ali ako je kvarenje odmaklo dolazi do promjena i u mirisu i u ukusu vina.<br \/>Kvarenje se uglavnom javlja kod vina sa ni\u017eim sadr\u017eajem alkohola (&lt;12%) i kod vina koja su \u010duvana u otpra\u017enjenim sudovima.<\/p>\r\n<p style=\"text-align: justify;\"><strong>Preventivna za\u0161tita podrazumijeva uvijek pune sudove vinom, redovno dolivanje sudova i za\u0161titu vina od vazduha<\/strong>.<\/p>\r\n\r\n\r\n\r\n<p style=\"text-align: justify;\">Ukoliko nema vina za dolivanje, \u0161to je \u010desto slu\u010daj kod na\u0161ih manjih proizvo\u0111a\u010da, preporu\u010duje se da se u \u010distu platnenu vre\u0107icu stavi odre\u0111ena koli\u010dina vinobrana. Vre\u0107ica sa vinobranom se zave\u017ee, umo\u010di u vino i u\u010dvrsti u prostoru iznad vina kako bi SO2 iz vinobrana sprije\u010dio kontakt vina i vazduha.<\/p>\r\n\r\n\r\n\r\n<p style=\"text-align: justify;\">Ukoliko je kvarenje u po\u010detku mo\u017ee se navlaka oprezno sakupiti i izbaciti iz vina, me\u0111utim, ako je kvarenje uzelo maha vr\u0161i se pasterizacija ili EK filtracija uz ja\u010de sumporisanje.<\/p>\r\n\r\n\r\n\r\n<p style=\"text-align: justify;\">Pored ovih kvarenja imamo jo\u0161 <strong>manitno-mlje\u010dnu fermentaciju<\/strong>, <strong>zavrelicu<\/strong> i <strong>tegljivost <\/strong>koje se u manjoj mjeri javljaju.<\/p>\r\n\r\n\r\n\r\n<p style=\"text-align: justify;\">Kako bi se vino za\u0161titilo od kvarenja va\u017eno je da gro\u017e\u0111e bude zdravo, da se sve faze tehnolo\u0161kog postupka proizvodnje vina odvijaju pravilno i pravovremeno, da se koriste dozvoljena enolo\u0161ka sredstva (vinobran tj. SO2, kvasci, enzimi i dr.).<\/p>\r\n<p style=\"text-align: justify;\">Tako\u0111e, sudovi sa vinom treba da su stalno puni kako bi se sprije\u010dio kontakt vina i vazduha. Higijena sudova i podruma kao i sve opreme i pribora koji se koristi treba da bude na visokom nivou.
