Zadebljali korijen se koristi u ishrani, a list i zadebljale bijele lisne dr\u0161ke kao salata, svje\u017ee i kao za\u010din. Celer je biljka iz porodice <em>Apiaceae<\/em>, koja se od antike gajila kao povr\u0107e. Korijen celera je bogat proteinima, mastima a lisna dr\u0161ka i list vitaminom C i provitaminom A. Svi biljni djelovi celera, sadr\u017ee eteri\u010dno ulje koje je specifi\u010dnog mirisa.<\/p>\r\n<p style=\"text-align: justify;\">Sjeme celera se koristi kao za\u010din, a njegovi ekstrakti se koriste u biljnoj medicini. Celer ima listove tamno zelenije boje&nbsp; i perasto su razdijeljeni, a listi\u0107i su nazubljeni. Celer se u narodu naziva i kao \u010dervez, pitomi celer i bjela\u0161. Treba voditi ra\u010duna prilikom upotrebe celera, jer spada u povr\u0107e koje mo\u017ee izazvati alergijske reakcije. Alergijsku reakciju mo\u017ee izazvati sirovi celer, kuvani celer ili su\u0161eni celer. Korijen celera sadr\u017ei vi\u0161e alergena od stabljike.<\/p>\r\n\r\n\r\n\r\n<h3>Gajenje celera<\/h3>\r\n\r\n\r\n\r\n<p style=\"text-align: justify;\">Celer je po zahtjevima prema toploti sli\u010dan \u0161argarepi, ali bolje podnosi niske temperature od nje. Na temperaturi od<strong> 3-4\u00b0C<\/strong> po\u010dinje da klija, a optimalna temperatura je<strong> 20\u00b0C<\/strong>. Celer zahtijeva dosta svjetlosti i ne podnosi zasjenjena mjesta, jer korijen ostaje sitan i bez intezivnog mirisa. Zahtijeva duboka zemlji\u0161ta koja su bogata organskom materijom, strukturna, sa pH oko 6.5. Slabo se razvija na lakim, pjeskovitim, zbijenim i hladnim zemlji\u0161tima. Dobar je diuretik, za rad bubrega, dobro uti\u010de na cirkulaciju krvi. &nbsp;Dobro djeluje pri lije\u010denju astme, reume i promuklosti. Tako\u0111e pobolj\u0161ava krvnu sliku, a acetileniks jedan od njegovih sastojaka spre\u010dava umno\u017eavanje \u0107elija raka. Celer sadr\u017ei biljno jedinjenje apigenin, koji djeluje kao protivupalno, antibakterijsko, antivirusno i antioksidativno sredstvo. Sjemenka celera sadr\u017ee oko 2 protivupalnih jedinjenja, koja mogu pru\u017eiti za\u0161titu protiv upale u tijelu. &nbsp;Kalorijska vrijednost celera je 16 kcal\/100g, a u toj koli\u010dini ima vitamina &nbsp;K<strong> 36.9%<\/strong>, vitamina A <strong>9%<\/strong> i vitamina C <strong>5.2%<\/strong>. Sadr\u017ei i druge vitamine ali u manjoj mjeri, bogat je i vlaknima. U povoljnim uslovima mogu\u0107a su tri otkosa uz prinos li\u0161\u0107a 50-80t\/ha. Posle svakog otkosa treba prihraniti sa <strong>40-50kg\/ha azota<\/strong>.
