Ne rijetko se de\u0161ava da proizvo\u0111a\u010di dobiju rakiju koja je sa manom, nedostatkom, koja se mo\u017ee uo\u010diti ili vizuelno (okom) ili na mirisu i ukusu. Uzroci ovih pojava su razli\u010diti.<\/p>\n<p style=\"text-align: justify\">Ukoliko se vr\u0161i destilacija vo\u0107nog kljuka koji se ukisjelio uslijed aktivnosti bakterija sir\u0107etne kisjeline, do\u0107i \u0107e do prelaska sir\u0107etne kisjeline u destilat. Dvokratnom destilacijom prelazi vi\u0161e isparljivih kisjelina u destilat nego pri jednokratnoj destilaciji sa poja\u010diva\u010dem. Sir\u0107etna kisjelina reaguje sa etanolom i dobija se etil-acetat. Uklanjanje vi\u0161ka etil-acetata obavlja se uz prethodnu neutralizaciju sa <strong>15% NaOH<\/strong> ( natrijum-hidroksidom) do <strong>pH 5,6-5,8<\/strong> a zatim ide destilacija uz jaku deflegmaciju, uz obavezno odvajanje frakcija prvijenca i patoke.<br \/>\nKod manjih koli\u010dina sir\u0107etne kiseline u destilatu , destilat treba svesti na ja\u010dinu za konzumiranje i tretirati ga sa 300-500 g MgO(magnezijum-oksida) na 100 l rakije .<br \/>\n<strong>Nakon 5- 6 h ( uz povremeno mije\u0161anje) rakiju treba odvojiti od taloga .<\/strong><\/p>\n<p style=\"text-align: justify\">Tako\u0111e kisjeli destilat se mo\u017ee tretirati i sa <strong>CaCO3<\/strong> (kalcijum-karbonatom) koji vezuje kisjelinu i talo\u017ei u obliku bijelog taloga na dno suda . Da bi odredili koliko nam je <strong>CaC03<\/strong> potrebno za neutralizaciju,moramo prvo da odredimo kolika je koli\u010dina kisjelina u kljuku .U ve\u0107ini slu\u010dajeva dovoljno je do 200 g ovog sredstva na 100 l rakije .<\/p>\n<p style=\"text-align: justify\"><strong>Pravilo je da 1 g kre\u010da vezuje 1,2 g sir\u0107etne kisjeline.<\/strong><br \/>\nPotrebna koli\u010dina se izmje\u0161a sa malo destilata i uz jako mije\u0161anje doda glavnoj koli\u010dini. Nakon talo\u017eenja, destilat se odvoji pretakanjem od taloga i filtrira.<\/p>\n<p style=\"text-align: justify\">Ako je rakija jako kisjela, koriste se ve\u0107e koli\u010dine od <strong>200g CaCO3 na 100 l rakije<\/strong>. Kisjeli destilat se razbla\u017ei na 30 % v\/v i nakon odre\u0111ivanja koli\u010dine isparljivih kisjelina, doda razbla\u017eeni NaOH(natrijum-hidroksid) kako bi se 90% isparljivih kisjelina neutralisalo.<br \/>\n<strong>Kada se koristi 1M NaOH(4%), tada je za 1g CH3COOH potrebno 15 ml baze da bi se 90% neutralisalo.
