Kod nas su vi\u0161e zastupljena i vi\u0161e se preferiraju masti \u017eivotinjskog porijekla kakve su svinjska, me\u0111utim tu spada i loj dobijen od pre\u017eivara (ovca, koza, krava, bivo, kamila), te naravno i \u017eivinaska mast.<\/p>\n<p>Dakle iz naprijed napisanog proizilazi da su sve masti u \u010dvrstom (bez obzira na porijeklo) dok su sva ulja u te\u010dnom agregatnom stanju. Ovo va\u017ei samo u sredini sa sobnom temperaturom, jer \u0107e na visokim temperaturama sva ulja i masti biti te\u010dni, dok \u0107e na niskim ne samo masti ve\u0107 i neka ulja postati djelimi\u010dno \u010dvrsta (primjer maslinovog ulja).<\/p>\n<h3>Prednosti i nedostaci masti<\/h3>\n<p>Prednosti masti \u010desto se i <strong>najvi\u0161e vezuju za zdravstvene aspekte<\/strong>, pri \u010demu treba imati u vidu radikalno druga\u010diji sastav masnih kiselina (jedinica gra\u0111e) masti sa jedne odnosno ulja sa druge strane.<\/p>\n<p><strong>Predstavnici masti (poput loja, svinjske masti, putera i sl.) imaju ve\u0107i udio zasi\u0107enih masnih kiselina (SFA).<\/strong> On se mo\u017ee kretati od 35% (kod svinjske masti) do preko (70%) kod putera. Loj se nalazi negdje izme\u0111u, sa svojih 50+% ukupnih zasi\u0107enih masnih kiselina, pri \u010demu treba imati u vidu veliku varijabilnost ove namirnice u ovom smislu. Loj dobijen iz unutra\u0161njosti trupa \u017eivotinje (primjer bubre\u017eni loj) ima\u0107e zna\u010dajno (nekada i 2x) ve\u0107u koli\u010dinu SFA od potko\u017enog loja iste \u017eivotinje.<\/p>\n<p style=\"text-align: center;\">\u00bbUlja u kojima preovladavaju polinezasi\u0107ene masne kiseline su u te\u010dnom obliku \u010dak i na niskim temperaturama, ona u kojima dominiraju mononezasi\u0107ene se u znatnoj mjeri zgusnu, dok su zasi\u0107ene masne kiseline zaslu\u017ene za krutost svih masti na sobnoj temperaturi.<\/p>\n<p><strong>Drugi aspekt sa koga se mogu posmatrati prednosti i mane masti u odnosu na ulja jesu na\u010din kori\u0161\u0107enja. Ovaj, na\u010din kori\u0161\u0107enja, tako\u0111e je dosta vezan za sastav masnih kiselina.<\/strong> Na\u010din kori\u0161\u0107enja masti odnosno ulja najbolje se karakteri\u0161e kroz<strong> ta\u010dku dimljenja<\/strong>.
