{"id":10508,"date":"2022-07-21T15:07:20","date_gmt":"2022-07-21T13:07:20","guid":{"rendered":"https:\/\/seljak.me\/savjetuje\/?p=10508"},"modified":"2022-12-30T13:26:37","modified_gmt":"2022-12-30T11:26:37","slug":"jagnjetina","status":"publish","type":"post","link":"https:\/\/seljak.me\/savjetuje\/jagnjetina\/","title":{"rendered":"Jagnjetina"},"content":{"rendered":"<p><strong>Jagnjetina je <a href=\"https:\/\/seljak.me\/savjetuje\/il-d-frans-mesnati-prekos\/\">meso<\/a> koje se odnosi na mlada \u017eenska i mu\u0161ka grla ovaca<\/strong>. Jagnje a samim tim i jagnjetima kao meso od koga se dobija, obuhvata uzrast <strong>naj\u010de\u0161\u0107e do 6 mjeseci<\/strong> i kao takvo se stavlja na tr\u017ei\u0161te. <strong>Ipak ono mo\u017ee biti i starije od 6 mjeseci<\/strong>, a ako jo\u0161 nije zaklano zvalo bi se \u0161ilje\u017ee, ali opet u industriji ono bi bilo &#8211; jagnjetina. U svijetu se rje\u0111e mo\u017ee sresti da se jagnjad kolju kada prema\u0161e prag od \u0161est mjeseci, dok je dosta prisutno klanje jagnjadi sa 3 mjeseca a nekada i manje.<\/p>\n<p><strong>Te\u017eina trupova jagnjadi zaklanih sa 6 mjeseci obi\u010dno iznosi 25 do 27 kg<\/strong>. Meso mladih jagnjadi (naro\u010dito do 3 mjeseca\/ponekad zvanih sisan\u010dadi) izuzetno je meko, so\u010dno i veoma blagog mirisa i ukusa. To omogu\u0107ava da se jagnjetina mo\u017ee spremati na veliki broj na\u010dina, te da pr\u017eenje na suvom ne predstavlja nikakav problem za meso ovog, i uzrasta do 6 mjeseci.<\/p>\n<p>Otko\u0161tavanje jagnjetine za potrebe tr\u017ei\u0161ta nije na\u0161lo primjenu a razlog treba tra\u017eiti u maloj veli\u010dini trupa te visokoj cijeni mesa po kilogramu.<\/p>\n<p>Kada se posmatra anatomski, a sa gledi\u0161ta tr\u017ei\u0161ta, jagnjetina se dijeli na \u010detiri osnovna ili primarna reza, to su: <strong>PREDNJI DIO<\/strong>, <strong>NOGA<\/strong>, <strong>SLABINA<\/strong> i <strong>POTRBU\u0160INA (slika 1.)<\/strong>.
